I actually just smoked a venison back strap. Butterflied, filled with garden fresh hot peppers, diced red and green peppers ( store bought) parsley, onion, cream cheese. Tied it with butcher string, wrapped it with bacon and smoked it in my Bradley (my retirement gift from the company four years ago.) Words cannot describe how good that roast was.

I've been looking for one of those cartridge conversions for my Ruger in Canada. No luck so far. Any fellow Canucks know of a distributor?
