Can the 303 barrel on my No.1 Mkiii*  be rechambered and bored to 375 Win? I’m thinking this as 35-303 dies are almost impossible to find.

Anything can be done but I don't think it's advisable.  The No.1 barrel is already 'whippy' enough without removing another tenth of an inch or so and the .375 Winchester factory loads are up to 52,000 CUP while the .303 British is a much milder 45,000 CUP.  That, plus the fact that it restricts your rifle to flat point bullets with a correspondingly poor BC unless you reload it with spitzer bullets for cartridges like the .375 H&H Magnum but then you'll have to learn to live with low bullet velocities and short range shooting.
