We are having goose at my house, two of them. I think it is a Scottish thing.
Always looking for military manuals, Dodge M37 items,books on Berlin Germany, old atlases ( before 1946) , military maps of Scotland. English and Canadian gun parts.

22 lb Turkey is in the smoker.  Rested in a Bourbon Brine overnight.

I do like Canadian goose breasts, only part I eat.

Shoot them when they land in my pond in the fall.

Not legal in the States but when you live out in the woods who knows.

Turkey breast here, neither of us likes dark meat.
No rotisserie this year though, we still can't find the blasted spigot for it!

The bourbon brined smoked Turkey came out great!  First time with this recipe.  After the cook, I wrapped it in butcher paper, foil and towels and let it rest in a cooler for 2 hours.  Incredibly moist.  

Ate this whole plate!
