Its so old its steam powered! I'll miss it, but its good at feeding the 5,000, & we're down to 2. We found it a new home, the neighbor is going to take it & put it to use. We gave him the 25 cent tour last night. He went nutz & brought a Spanish feast, so we celebrated the new ownership with an impromptu block party. It must have cooked 5 Lbs of Carne Assada, plus chicken wings & scallions! Then he brought rice & beans!

We did the first burn, to remove the release agents & paint volatiles today. A full Weber chimney of Kingsford went to almost 400° before I throttled it back to about 50% then it dropped back to about 375° & stayed there for an hour & 20 minutes. The full cylinder neatly filled the baskets, so it looks like it will be economical on fuel. |

I looked into both the big green egg & the Komodo. There are all sorts of restrictions as to the charcoal you can use, supposedly because of the ceramic construction. "Can I use charcoal briquettes or lighter fluid in the EGG?
Please don’t! Briquettes contain a variety of materials, including nitrates, chemicals, anthracite coal, limestone, treated wood, starch, sawdust or petroleum by-products. Does anyone really want to cook with those additives? We recommend using only Big Green Egg 100% Natural Lump Charcoal for a clean, controllable fuel source. Natural lump charcoal burns efficiently and produces very little ash, so cleanup is easy. NEVER USE LIGHTER FLUID or charcoal products that contain lighter fluid … you don’t need it and you don’t want the chemical taste on your food. Our Natural Charcoal Starters or Electric Starters are designed to start your EGG quickly and cleanly." The local hardware store/gunshop has them so I was able to check them out. Its basically a Westernized Tandoori oven.

I normally use briquettes, but add some fruit-wood or other suitable wood chips or chunks. I have quite a lot of the chips, but if I'm smoking in a kettle I think big chunks will be better because you have to make a "Fuse" a snake like wending trail of briquettes to slow down the burn & lower the heat. Chips speed the burn up, unless they're somewhat separated, or so I'm told.

Hoadie: I think its because the ceramic absorbs everything. Its not sealed (intentionally) to trap flavor, but it has this disadvantage because of it!

Man has been using wood (charcoal, briquettes, pucks, loose shavings) for at least 200,000 - 300,000 years. Some archeologists are thinking 1,000,000 years. Who would have thought it would take a Green Egg to finally crack the code (forgive the pun) and realize you can only eat healthy by burning their wood product...

I don't think you MUST use theirs, any lump will do, but briquettes are supposedly actually a no-no. I just lit my setup with a mix of scrap pieces of pork, chicken, steak, Brats & other goodies to flavor it up. I also put Apple & cherry, maple & JD barrel wood chunks & chips in. This is pretty much an aggregate of what I cook so it should be close. Next time it the real thing. It took a loong time to come to temp using the snake method. I think I'll modify it slightly, having more fully lit coals to start so i warms faster.

I think I read where briquettes, in their current form, were made popular by Mr. Kingsford, the name of a very popular briquette company. He saw the wasted pieces of wood that were just thrown away at a Ford plant. The wood was used to make the Model A (or T, can't remember) cabin frames. He took the scrap, made it into charcoal, and the rest, as they say, is history.
